When we think of the iconic Lamington, many of us will automatically associate them with Australia Day. The soft sponge centre coated in chocolate and coconut melts in your mouth, only to make such a messy spray of crumbs if you’re mid-chew and burst out laughing! Lamingtons must be washed down with a good cuppa to avoid the coconut wheezes. We had an Australia Day party a few years back, and one of the games was the Lamington eating competition. The idea was to eat as many as you could in one sitting without a drink to wash it down. My niece got to 22 and proceeded to vomit!! I digress…
